Apple Pie Energy Bites
Raise your hand if you had a great weekend? Me, me!!! It started with Six Flags and ended with apple picking at our farm. Which completely changed my recipe for today. Instead of some boring (not really) recipe I have fresh from the tree Apple Pie Energy Bites.
Remember my earlier confession when I confessed I give my kids not so healthy treats when school first starts. Well, that time is over and it’s back to healthy after school snacks. This recipe fits that bill they just don’t know it. I make it in a mini muffin pan but you could totally make these as cookies too. My kiddos see oatmeal and apples and think they are getting some kind of apple pie treat 🙂
I’m not going to tell them any different!
I have a very near and dear friend named Lisa who is a Cross Fit junkie. If you are fortunate enough to have one of these as your close friend you know that they kill it in the gym but are great resources for healthy food as well. I mean really is that surprising. You aren’t tossing a tire across the gym living off of doughnuts!
When we was on vacation last month she brought these killer oatmeal cookies. So I got the recipe altered it a little bit to accommodate apples and tada. Apple pie energy bites.
But first before we get to the recipe, which is super duper easy. I have even included a little trick I use if you don’t like chunks of apples when you bake them.

Ten years ago this fall Urban’s father passed away. At that time Urban knew that he wanted to purchase the “family farm” but with 8 brothers and sisters. Yes, you read that right. EIGHT! He knew he had to tread carefully. About a year after his father passed away his mother got an offer on the farm. Urban matched the price and the “family farm” was ours!
We don’t live there. (Gravel road) Do I need to say more? If you have lived/grown up (which Urban and I did) you know all the joys(sarcasm) of living on a gravel road. The farm is only about 5 minutes from our house. A very easy drive to get to. Now that you know the (completely unnecessary) back story of our farm. Pictures……………
In the background we have grapes, blackberries and peaches. BUT the deer can reach those 🙂 And since we don’t live here there isn’t anything to stop them from chowing down. Luckily apples are higher!
We had so many apples the branches are hanging down from the weight of them.
Always trying to keep up with his older and bigger brothers.

Time for our recipe, Apple Pie Energy Bites.
Mix together in a blender until the apple is completely liquid
- 1 cup almond milk (or any kind of milk it doesn’t matter)
- Sliced up apple
- 1 egg
- 1/2 cup of honey or maple syrup
Combine the following dry ingredients
- 2 cups of oats (I used instant)
- 1 teaspoon of baking soda
- 1/8 teaspoon of salt
- 1/2 teaspoon of apple pie spice
Once you have this mixed together, pour in the liquid mixture.
Stir together completely and drop by spoonfuls into a mini muffin pan. I used a tablespoon.
Bake at 375 for about 18 minutes.
I also added walnuts to a couple of them. Just because 🙂 Delicious! I hope you enjoy them.
When you need a quick pick me up. Great for breakfast or an afternoon healthy snack.
- 1 cup almond milk
- 1 apple
- 1/2 cup honey
- 2 cups oats
- 1/8 teaspoon salt
- 1/2 teaspoon apple pie spice
- 1 teaspoon baking soda
- 1 egg
In a blender mix together the milk, honey, egg and apple.
Combine all of your dry ingredients together.
Add the liquid and mix completely.
Bake at 375 for 18 minutes.
