Crisp Cucumber Salsa
Hello everybody! How was everybody’s weekend? We got invited to go camping over the weekend and I needed a recipe that would be easy, fast and packed in a cooler without hassle. With that in mind, hello crisp cucumber salsa.
This is not your normal cucumber salsa. I added a twist. Scroll to the recipe if you want to know what it is immediately.
Back to our weekend. I said that we got invited to go camping. But it was camping in a tent!! I could get into all the reasons why it is a bad idea to go camping in a tent, but I will refrain myself. My boys had a wonderful time. It is funny the things you will end up doing as an adult to please your children.
If you asked me growing up if I would go camping the answer would be no. A very big NO! I will let you in on a secret, I had a blast 🙂 Please don’t tell Urban, ha. With no house to take care, dishes or laundry I found myself with a lot of time to be able to hang out with my boys.
One of my families favorite movies to watch is RV with Robin Williams. Totally had a couple of those moments. The good ones. Tossing balls, walking around the RV camp and swimming.
If you have been tossing around the idea of camping I highly recommend it. No video games, television or even radio. It was an adjustment. But it was great family bonding. And while you are camping you can make my crisp cucumber salsa.
The crisp cucumber salsa is very easy and fast to make. Really I had cucumbers and cherry tomatoes from the garden to use 🙂 And that is the real reason why I made this.
With seven ingredients you will have this put together in five minutes and done!
Start with peeling and dicing your cucumber. I cut it into small chunks. Next take about 12 cherry tomatoes and quarter them.
Notice the bowl. I actually made this in the bowl I was taking it in. So the only clean up was the knife that I was using, score!
Slice and dice your onion. I used about 1/2 a small onion. This is totally your preference but I was afraid it would take away from the taste if I put too much in.
Looks good already!
Add one packet of dry ranch mix, 1 teaspoon of cilantro and 1/4 cup of white wine vinegar.
And the secret to this crisp cucumber salsa………….honey!
Your last ingredient is honey. Add about a teaspoon and stir the salsa completely.
The honey and cherry tomatoes give your salsa a sweeter taste. I can’t help it, I know it is a problem. My brain automatically thinks everything needs to be sweet 🙂
A twist on the cucumber salsa. Try this crisp cucumber salsa made with cherry tomatoes and honey to give your salsa a slightly sweeter taste.
- 12cherry tomatoes
- 1packetdry ranch dressing
- 1/4cupwhite wine vinegar
- 1teaspoon honey
Peel, cut and quarter your cucumber
Quarter your cherry tomatoes
Slice and dice about 1/2 a small onion
Add one packet of dry ranch dressing
Add 1 teaspoon of cilantro
Mix in 1/4 cup of white wine vinegar
Stir in 1 teaspoon of honey
The honey is optional and you could use regular tomatoes. By using my ingredients you will have a sweeter salsa.
Okay yes I made it in the bowl I took it in. But the plastic bowl wasn’t that pretty so I switched it out to take pretty pictures 🙂 Does that make me a picture snob 🙂 lol
Before serving I actually tipped the bowl upside down and shook it and then when I opened the bowl I stirred again to mix the dressing.
