Hello Monday! I am glad to see you because last week was a tough week. For everybody that stops by on a weekly basis my computer broke last week. Or I should say my 23 month old spilled water onto the keyboard of my laptop and it stopped working correctly. 🙂 Chalk it up to #lifeofamom After panicking for four days Urban came to the rescue and bought me my birthday present early! A brand new Mac book! Which also means that today’s recipe, easy cheese scalloped potatoes recipe is the very first recipe from my new computer 🙂
But first a scalloped potato recipe story!
My all time favorite meal is this recipe. The credit for this recipe goes to my mother. She has made this as long as I can remember. Growing up whenever it was a bad day at school or just needed a pick me up my mom knew that some easy cheesy scalloped potatoes would cheer me up.
Not only is this my favorite meal but it is also my brother’s. When holidays roll around this is the first item that is requested that she make. Urban endures very quietly. And after 17 1/2 years together I know he is over this recipe.
But like a good hubby, Urban knows, don’t mess with my scalloped potatoes. I do not have many recipes that I hold sacred. The easy cheesy scalloped potatoes recipe is one of them though.
I have tried to wait to share this recipe until the weather has gotten colder. Or at least until we are thinking of colder weather. Scalloped potatoes can be overwhelming just by looking at them. And of course there is the thickening sauce if not done correctly it will result in the recipe becoming a flop.
The recipe can be put together in about five minutes. Depending on how quick you can peel and slice potatoes. Remember, favorite recipe. I have had years of practice 🙂 It’s just the baking that takes a long time. But so worth it when you take that first bite.
My recipe only calls for six ingredients. Six!!! I recommend using a 9 x 9 dish for this recipe. You will notice that I used a smaller dish. I couldn’t find my other dish. Anyhoo, use the 9 x 9. It’s easier.
Easy Cheesy Scalloped Potatoes Recipe
Wash, peel and slice into very thin slices six potatoes.
You can slice the potatoes as thin as you like. I like mine thicker but it’s your recipe so your choice. Once your potatoes are sliced you will need to make the milk mixture.
Mix together 2 cups of milk, 1/4 cup of flour, 1/4 teaspoon of salt and 1/2 teaspoon of pepper. You will cook this on the stove and stir with a whisk until it has thickened.
After the milk has thickened. Compare it to a slightly runny gravy. Pour over the potatoes.
Take 1/4 cup of shredded cheese and mix into your pan.
Bake at 350 for 45 minutes. Take out of the oven at add more cheese 🙂 This is not a healthy recipe. This is an I-have-had-a-terrible-week-my-computer-broke meal 🙂 And I NEED comfort food, ha!
Cover the dish with more cheese!! Another 1 cup of cheese, please.
Bake for 15 more minutes or until the cheese has gotten golden brown.
Take out of the oven and enjoy.
Like I said this is my comfort food. I can take a big plate of this by itself with absolutely nothing else. But it pairs well with fried chicken or if you want to go healthier baked tilapia.

An easy to follow scalloped potatoes recipe when comfort food is calling you.
- 6 potatoes
- 2 cups milk
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup shredded cheese
- 1 cup shredded cheese
Wash, peel and slice potatoes
On your stove whisk together milk, flour, salt and pepper until the milk has thickened.
Pour over the top of your potatoes
Stir in 1/4 cup of cheese and bake at 350 for 45 minutes
Take out of the oven and cover with another 1 cup of cheese and bake for an additional 15 minutes
