Who is ready for summer? I have been loving this weather lately. It has been a perfect 70’s weather this week. This makes it perfect weather for grilling. This also means I am looking at everything in the grocery store wondering if I can cook it on the grill. So in light of those thoughts today I am sharing a grilled watermelon yogurt recipe 🙂
If you read my blog you know I am a little off the wall in what I put on the grill. Hello, BBQ Apple Pie! Click here to read that recipe. When most people think of the grill they probably think steak. Well I will say I love a good steak on the grill but I love fruits and vegetables more.
How does one think up a grilled watermelon
Growing up our table included meat and potatoes. That was the basis of every meal. Our extent of fruit growing up was bananas. So after my son was born I realized that our eating habits had to change. Sorry Urbie it was our son not you that motivated me to start cooking healthier. Well, start cooking, ha!
Until this time I had only had watermelon one time, when I was 19 and on a business trip. I was in Chicago at a fashion show and the breakfast was an assortment of fruit. WHAT! No doughnuts, pastries, muffins just fruit. And not a banana in sight. And that is how I discovered that fruit wasn’t so terrible. 🙂
How do you make a grilled watermelon yogurt recipe
My son has a book called, “How Do you Hug A Porcupine?” and the end of the book says very carefully. Well you grill fruit the same way. Very carefully. About five minutes per side and it is done.
Preheat the grill and turn it on low.
Cut your watermelon into 1/4″ quarter slices.
Place on the grill and grill five minutes per side.
Once it is done carefully remove from the grill and top with the vanilla yogurt, walnuts and honey. Go decadent and top with white chocolate!
What kind of yogurt should you use? Technically any yogurt will do, but in our household we use Oikos Vanilla Yogurt. Why? It’s the best! I can read and understand every ingredient and my kids are bonkers over this yogurt. We go through two containers a week.
Tired of the same recipes on the grill? Try my grilled watermelon that is topped with yogurt, walnuts and honey. Perfect as a side dish, appetizer or snack.
- 1 watermelon
- 1/4 cup walnuts
- 1/4 cup vanilla yogurt
- drizzle honey
Grilled watermelon 2-3 minutes per side
Take off the grill carefully
Top with yogurt, walnuts and honey. You can also add white chocolate for an extra treat.
