How was everybody’s weekend? Mine was full and relaxing all at the same time. Over the weekend Missouri saw weather in the 70’s!!!! In August!!! Which totally put me in the Fall mood. Which made me want to bake. Okay I will be straight with you, every kind of weather makes me want to bake. With the colder temps I really wanted to make my pumpkin spice cookies. These cookies get made exactly once a year. So today I am sharing my pumpkin spice cookies recipe.
Yes I said once a year. I am not sure why. They are probably my 2nd favorite cookie to eat 🙂 Maybe that is why, after eating a dozen myself I couldn’t have these cookies in the house that often.
There is no story with these cookies 🙁 I can’t even remember where I got the recipe or why?
So instead of a pumpkin spice cookies recipe story I will share with you what we have been up to. School in Missouri starts early compared to other places. I consider August the last chance month. Last chance to get to the pool. Last chance to get to indoor play areas. School starts on the 17th so we have to cram a bunch of stuff in the first two weeks of the month.
Not to mention school shopping. Check that off my list. Urban even came with me. Listen taking three boys shopping for clothes when one of them is 23 months old. Not fun, not fun at all! We was in Dick’s Sporting Goods and my hubby abandoned me, just abandoned me to get two boys to try on shoes and keep my youngest from running off. Of course then my 23 month old is screaming at the top of his lungs.
The funny part–
A sales associate and my hubby show up right when we was done. To the guy at the store, I am very sorry for the mess we left. But I was done! And to Urban, if I went over a budget you should have helped. Oh and then Urban goes, was that our son crying? I heard him all the way at the front of the store. (Bleep, bleep, bleep) 🙂 Motherhood, gotta love it! After three boys rarely anything phases me, so yes I was laughing on the inside at the sight I am sure we made.
After a long Saturday of shopping, Sunday was church and fishing. Once school starts we can still go fishing it just seems that it doesn’t happen as often. So one last time of fishing before school starts as well.
Now back to these cookies
The pumpkin spice cookies make about 2 1/2 dozen depending on how big you make them. I make them big enough they are almost like a small scone. My youngest asked for a fork to eat it. lol
Start by melting the butter, then mix in the sugar, brown sugar, salt, baking soda, egg, cinnamon and vanilla. Add one can of pumpkin, flour and the oats. Mix well. Drop by spoonfuls on a cookie sheet. Bake at 375 for eleven minutes. A quick note, when you drop the cookie mix drop to smash the cookie down a tad on top. You will be putting icing on them and you want to make sure they are flat enough on top for this.
The pumpkin spice cookie is not a sweet cookie by itself. In fact I keep some of the cookies without icing. They are delicious without the icing. If you want a little sweetness though add the icing. It also dresses up the cookie in a pretty way.
A delicious pumpkin recipe full of pumpkin, cinnamon and oats. Perfect for an afternoon snack or in the morning with your coffee.
- 1 can Libby's Pumpkin
- 1 3/4 cup quck oats
- 2 1/4 cup flour
- 1 cup melted butter
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1 container cream cheese icing
Melt 1 cup butter
Add sugar, brown sugar, salt, baking soda, cinnamon, vanilla and egg. Mix well.
Stir in one can of Libby's Pumpkin
Add flour stirring as you go
Add oats and mix well
Drop by spoonfuls on cookie sheet
Bake at 375 for 11 minutes
Once cooled, ice with cream cheese icing. (optional)
