Strawberry Shortcake Muffins

I am very excited to share this recipe today.  Earlier this month we got invited to a lake party and up until last week I did not know what I was going to make.  I was craving strawberry cheesecake but Urban quickly nixed the idea of cheesecake at a lake party.  Finger foods, Lindsay!  Now as soon as somebody says sorry it won’t work, I think “game on!”  It took a little bit but I finally came up with a solution.  Strawberry shortcake muffins, stuffed with cheesecake and topped with strawberries 🙂  Are you salivating yet?

Not only are they a mini strawberry cheesecake party in your mouth; depending on how you serve them they are a finger food.  Double win for a lake party!

But first story time 🙂  So you know we got invited to a lake party.  While I was making these our friends cancelled because she hurt her back.  Well, I couldn’t let them go to waste so I served them to Urban, my dad who happened to stop by and of course me.  I had to taste one(it may have been more like 6) who’s counting.  Then the next day–she un-cancelled lol  There wasn’t enough left to take.  Oh well.  I enjoyed them 🙂  Now back to our recipe.

There is three parts to this recipe.  I know three but I promise they are all super easy.  You have the muffin, the cheesecake and then the strawberry topping.

Start with making your strawberry muffins.

  • 1/4 cup butter, melted
  • 2 cups flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • optional 1/4 teaspoon almond extract–Urban didn’t like it, my dad loved it.  So you can decide.  I made 1/2 the original way and then the second batch I added 1/8 teaspoon of almond extract.

Mix the above ingredients in a bowl and divide them into a mini muffin pan.  I filled the muffin pan almost to the top, if I make this again I will fill it to the top.  It makes it easier to stuff the muffins later with the cheesecake.

Bake at 350 for about 10 minutes.

Quick tip.  To get the muffins out use a tablespoon.  See the picture above.

Next make the strawberry topping/dip

If you are really multi-talented you can do this step while the muffins are cooking.  Take one container of strawberries and 1/4 cup of sugar and smash.  This is either your topping of your dip.  Served in a bowl you could use it as a topping or at a lake party 🙂 use it as a dip.

Like my smasher–you don’t know how many thrift stores it took to find this.  Or so my mother tells me, she is the one that finally found it.  This was before Amazon and E-bay came along.

Unfortunately I did not get a picture of this next part.  Too many things going on 🙂  Get your mixer out, unless you are really good at mixing cream cheese by hand.  Sadly, I am not!

You will need

  • 16 oz. cool whip
  • 8 oz. cream cheese-I use whipped
  • 2 packages of instant vanilla pudding

Mix all these together in a mixer.  Once your muffins come out of the oven you will stuff your muffins with this.  The easiest way to do this is if you have an icing bag and tip.  Use the tip that you would to stuff cupcakes.  Works perfect.

They don’t have to look perfect because you will top them with more cheesecake 🙂

And once you are done.  Yum!  If you notice in the first picture I actually topped some of the strawberry muffins with a plain strawberry.  Urban didn’t care for that either 🙂  Picky man!  In the end I kept them all with only cheesecake on top and the strawberries as a dipping sauce.

  • Mini Shortcake Muffins
  • 1/4 cup butter
  • 2 cups flour
  • 1/4 cup sugar

  • Cream Cheese Filling
  • 16 oz cool whip
  • 8 oz cream cheese
  • 2 packages of vanilla pudding
  • Strawberry Topping
  • 1 container of strawberries
  • 1/4 cup of sugar
  1. Melt the butter and then mix with all the other ingredients. You will divide them into a mini muffin pan. Depending on how big you want the muffins is how many you will end up with.
  2. While this cooks you can mix the cheesecake.
  3. Mix all three ingredients together in a mixer until completely smooth.
  4. Once the muffins have come out of the oven you will stuff and top with the cheesecake mixture.
  5. Before it is time to serve them. Mix your strawberries with 1/4 cup sugar. Smash them to your desired consistency.
  6. Serve immediately.


And done!!!  Enjoy!

This recipe was super easy.  It just has a lot of things going on at once if you are trying to get done in a hurry.  Which I was.
