Taco Salad Recipe with Doritos

Taco Salad Recipe with Doritos

Happy Wednesday everybody.  How was your evening?  Yesterday was Urban’s birthday so we had an ice cream cake and celebrated with one of his favorite meals.  I had something completely different planned for today but after making supper last night I realized that I needed to share this.  The recipe is a taco salad recipe with Doritos.

There is so many versions of a taco salad but mine is a taco salad recipe with Doritos.  It is fast and easy.  Great for a week night meal when you either don’t have time or don’t want to be in the kitchen.

I can tell you from experience that most nights after I get home from work the very last thing that I want to do is go to the kitchen.  This recipe is fast and simple.

First let’s wish my hubby a very happy birthday 🙂

Yes that is a bird on my son’s head.  He has trained it to stay on his head while he goes through the house???  Kids, I tell ya.

Anyways back to Urban.  This is one of my hubby’s favorite meals.   This recipe is courtesy of his mom.  And you know where I am going with this.  It has taken me seventeen years of making this for him to stop saying, “But it doesn’t take like my mom’s!”  We joked last night that he just forgot how his mom’s tasted.

Onto the recipe.  This recipe only has a few ingredients.  Seven to be exact.  And please, pretty please do not substitute the Doritos and Thousand Island for generic.  You will ruin this recipe.  I’ve tried it and it does not work.

Start by browning your hamburger.  If you want a meatless meal swap out the hamburger for black beans.  Use a medium setting.  Guess what, keeping your stove on high doesn’t mean that the meat will cook faster 🙂  It will be black on the outside and not cooked inside.  Just a quick tip from one cook to another, ha!

While this is cooking smash your Doritos.  If you want to see our technique you can go to my Instagram account here.  I open the bag and put a clip on the end and then take my rolling pin and pound.  Usually one of my boys does this.  Last night they were fighting over it.

Dump the Doritos into a very large bowl.  I use a really large Tupperware bowl.  Next shred a head of lettuce, dice up a tomato and top with shredded cheese of your choice.  I use Colby cheese.

At this point your hamburger should be done.  You can drain the grease off the hamburger and add it to your taco salad.

The last step you will add your Thousand Island salad dressing.  I use about  1 1/2 cups.  I love that this recipe can be altered to your preferences.

And once you have it mixed completely, enjoy!

  • Some background on the Doritos Taco salad recipe: I was a young bride in the late sixties when I came across the recipe in, I think, a Family Circle Magazine ad for Doritoes. It sounded good so I tried it…A HIT! The original ad recipe had you cook up the hamburger with a chopped onion, then add a drained can of kidney beans. Toss with the greens, cheese, chopped tomato and avocado, and serve with optional thousand island dressing. (The idea was having all the tastes present in a taco!). Over the years we have ‘morphed’ this FAVE of my husband’s (he says he could eat it for dinner every night….we’ve settled on it being Monday Night Football fare and at least once a week the rest of the year!). Presently our taco salad is kidney beans, canned corn, sliced black olives, green onions, sharp cheddar, tomatoes, avocado and, of couse, cheesy Doritoes (no dressing….my Man likes all the different tastes to come through!) Left overs, if there are any, are served as ‘tostadas’ the next day (corn tortilla heated with refried or pinto beans and cheese, topped with fresh greens, left over salad, and guacomale or sliced avocado). So….maybe your mother-in-law’s version WAS different😉

    • 🙂 I love stories. Thanks for sharing yours! My hubby takes it cold the rest of the week in his lunch. He swears it is even better cold the next day.

  • This taco salad recipe sounds amazing. I love taco salads and this one sounds like a keeper. Thank you for sharing on Think Tank Thursday link party. Shared and pinned.

  • Wowzers, I’ve heard people talk about taco salad before, but I never imagined it had all these yummy ingredients! That’s what I get for assuming it was made like a layered dip, instead of an actual tossed salad. I’m definitely going to try this soon. PINed it, and thanks for sharing with us at Friday Frenzy!

  • What a fun family photo with the bird and a birthday. Your Taco Salad looks awesome, we just love Doritos! Thanks so much for sharing with Full Plate Thursday and come back soon!
