Happy Wednesday everybody. How was your evening? Yesterday was Urban’s birthday so we had an ice cream cake and celebrated with one of his favorite meals. I had something completely different planned for today but after making supper last night I realized that I needed to share this. The recipe is a taco salad recipe with Doritos.
There is so many versions of a taco salad but mine is a taco salad recipe with Doritos. It is fast and easy. Great for a week night meal when you either don’t have time or don’t want to be in the kitchen.
I can tell you from experience that most nights after I get home from work the very last thing that I want to do is go to the kitchen. This recipe is fast and simple.

Yes that is a bird on my son’s head. He has trained it to stay on his head while he goes through the house??? Kids, I tell ya.
Anyways back to Urban. This is one of my hubby’s favorite meals. This recipe is courtesy of his mom. And you know where I am going with this. It has taken me seventeen years of making this for him to stop saying, “But it doesn’t take like my mom’s!” We joked last night that he just forgot how his mom’s tasted.
Onto the recipe. This recipe only has a few ingredients. Seven to be exact. And please, pretty please do not substitute the Doritos and Thousand Island for generic. You will ruin this recipe. I’ve tried it and it does not work.
Start by browning your hamburger. If you want a meatless meal swap out the hamburger for black beans. Use a medium setting. Guess what, keeping your stove on high doesn’t mean that the meat will cook faster 🙂 It will be black on the outside and not cooked inside. Just a quick tip from one cook to another, ha!
While this is cooking smash your Doritos. If you want to see our technique you can go to my Instagram account here. I open the bag and put a clip on the end and then take my rolling pin and pound. Usually one of my boys does this. Last night they were fighting over it.
Dump the Doritos into a very large bowl. I use a really large Tupperware bowl. Next shred a head of lettuce, dice up a tomato and top with shredded cheese of your choice. I use Colby cheese.
At this point your hamburger should be done. You can drain the grease off the hamburger and add it to your taco salad.
The last step you will add your Thousand Island salad dressing. I use about 1 1/2 cups. I love that this recipe can be altered to your preferences.
And once you have it mixed completely, enjoy!
An easy and fast week night meal for your family. Perfect for those nights when you don't have time or the energy to put together an elaborate meal.
- 1 pound hamburger
- 1 package taco seasoning
- 1 head lettuce
- 1 tomato
- 2 cups cheese
- 1 1/2 cups Thousand Island Dressing
- 1 bag Doritos
Brown your hamburger. Add the taco seasoning
While the hamburger is cooking smash your Doritos
Add the Doritos to a very large bowl
Shred your lettuce and add to the bowl
Dice your tomato and add to the bowl
Add the cheese
Add the hamburger
Top with the dressing and stir completely
