Hey everybody how has your week been? Mine has been crazy! Does anybody else feel like the summer is flying by but at the same time I don’t feel like I am getting anything accomplished. We was so busy picking blackberries earlier this week that I didn’t have time to actually make this recipe. And that is a shame. The turkey blackberry mozzarella wrap is not only delicious it can be put together as fast as bacon can cook. Kinda tells you how crazy this last week has been.
One of my favorite past times is picking berries or working in the garden 🙂 Especially since I have had kiddos. No, they don’t always want to help (well only one of them doesn’t) which is especially funny because he is the one that I got a picture of helping!
Now that I have embarrassed my oldest sufficiently let’s get back to the blackberries. Turkey and cranberries they go together like peanut butter and jelly. I am asking that you step out of your comfort zone and try turkey and blackberries. With a side of bacon 🙂 It is mouthwatering good. The blackberries give it a sweeter taste and the bacon gives it the crunchy, saltiness that any good sandwich needs. Top with a little bit of shredded mozzarella and spinach and you have the makings of a healthy, fast, quick meal.
Usually I show you step by step how the ingredients go in but it is so easy that I am just showing you the final product. I actually adjusted the recipe a little after making this because it was very runny.
To make the turkey blackberry mozzarella wrap in a bowl combine and smash
- 2 cups blackberries
- 1/4 cup chicken broth
- 3 tablespoons dark brown sugar
- a pinch of cumin
- 1 teaspoon of garlic
- 1/2 taspoon of paprika
- 1 teaspoon of honey
Once that is done get a sandwich wrap. I chose a spinach wrap but any kind is fine.
Spread out your turkey slices, spoon the blackberry mix over the top of the turkey, add bacon, spinach and mozzarella. Roll your wrap and you are done.
And you are finished and a very quick meal is on the table. I served this with kettle chips. It has been 100 here the past couple of days and I just can’t find the energy to turn the stove on after working all day!
- 2 cups blackberries
- 1/2 cup chicken stock
- 3 tablespoons brown sugar
- pinch cumin
- 1 teaspoon garlic
- 1/2 teaspoon paprika
- 1 teaspoon honey
Add all ingredients into a mixing bowl and smash until you reach the consistency you like.
Take any kind of wrap you like and top with turkey, blackberry jam, bacon, spinach and mozzarella. Fold and done!
